Almost all of India makes chai like this. While there’s no fixed recipe, this one is a good place to start. It may feel like you’re oversteeping the tea but this technique works well because it blends the flavors of milk, tea and spices really nicely. Here are the steps involved in making the perfect cup of Indian chai:
Step 1 Pour water into a pot and bring it to a rolling boil. Add the chai blend to it; three fourth of the recommended quantity.
Step 2 Let the tea leaves steep for the recommended time. Once a desired body and liquor strength has been achieved, add the desired quantity of milk and sugar.
Step 3 For one cup of tea, you may opt to follow 2:1 ratio of water and milk respectively. However, you may play around with the quantity as per your personal preference for tea strength and flavor.
Step 4 Once add-ons have been included, turn the heat to low. Simmer the chai for additional 2-3 minutes. Once the chai takes on a light milk chocolate color, it’s ready to be poured.
Step 5 Strain the chai to separate leaves and other solid ingredients.
Step 6 Pour it into cups and enjoy.
